Christmas alfajores

  • 2 yolks
  • 6 tbsp ghee
  • ½ cup monk fruit glass
  • 1 ¾ cup almond flour
  • ¼ cup coconut flour
  • 1 tbsp vanilla
  • 1 tsp baking soda
  • 1 tsp salt
For the filling:

  • 1 80% Cacao Culto Chocolate Bar
  • 1 tablespoon coconut oil


  1. Preheat oven to 325F.
  2. Add the powdered sugar and ghee to the mixer glass. Beat on low speed until creamy.
  3. Add the yolks and vanilla and beat lightly.
  4. Add the flours, baking soda and salt. Beat until everything is well incorporated and a dough forms.
  5. Add a little coconut flour on a surface and flatten the dough with the help of a rolling pin.
  6. Cut the shapes out of the cookies and transfer them to a baking tray.
  7. Put in the oven for 13-15 minutes or until they look golden brown. Take out and let cool.
  8. Chop the Culto chocolate bar into a bowl and add a tablespoon of coconut oil, melt it in the microwave slowly to give it a thick consistency, without being liquid.
  9. Add the chocolate on one of the cookie halves.
  10. Add another cookie on top of the filling to form the alfajor.
  11. Decorate with powdered sugar and enjoy.
