Ingredients
- 1+1/3 cup almond flour
- 1/3 cup monk fruit
- 1c baking powder
- 1 pinch of salt
- 1/2 cup unsweetened Greek yogurt
- 2 eggs
- 2C coconut oil
- 1c instant coffee
- 2c Cacao powder
- 1 pinch of cinnamon powder
- For the cocoa nib crust:
- 2C Cacao nibs
- 1/2 teaspoon instant coffee
- 2-3C monk fruit
- 1c coconut oil
- 1 pinch of cinnamon powder
Process
- In a bowl mix the egg, yogurt, monk fruit and coconut oil.
- Add the almond flour, baking powder and pinch of salt. Divide the mixture into 2 equal parts.
- To one of the parts add a little cinnamon powder, to the other part add cocoa powder and soluble coffee.
- In a previously greased baking container, place the mixtures, interspersing 1 tablespoon of each.
- With the help of a knife, give a marbled effect to the pancake.
- Combine all the crust ingredients and add them on top of the pancake mix.
- Bake it at 180°C for 35 min
