  • 1+1/3 cup almond flour
  • 1/3 cup monk fruit
  • 1c baking powder
  • 1 pinch of salt
  • 1/2 cup unsweetened Greek yogurt
  • 2 eggs
  • 2C coconut oil
  • 1c instant coffee
  • 2c Cacao powder
  • 1 pinch of cinnamon powder
  • For the cocoa nib crust:
  • 2C Cacao nibs
  • 1/2 teaspoon instant coffee
  • 2-3C monk fruit
  • 1c coconut oil
  • 1 pinch of cinnamon powder


  • In a bowl mix the egg, yogurt, monk fruit and coconut oil.
  • Add the almond flour, baking powder and pinch of salt. Divide the mixture into 2 equal parts.
  • To one of the parts add a little cinnamon powder, to the other part add cocoa powder and soluble coffee.
  • In a previously greased baking container, place the mixtures, interspersing 1 tablespoon of each.
  • With the help of a knife, give a marbled effect to the pancake.
  • Combine all the crust ingredients and add them on top of the pancake mix.
  • Bake it at 180°C for 35 min
