Mussi Chocolate Cookies Recipe with PB

Ingredients

· 1 cup MUSSI peanut butter
· 1/2 cup monk fruit
· 1/3 cup unsweetened CULTO Cacao Powder
· 2 eggs
· 1/4 cup unsweetened almond milk
· 1 teaspoon aluminum-free baking powder


Process

  1. Preheat the oven to 180ºC (350ºF).
  2. Cover a tray with waxed paper.
  3. In a large bowl, add and mix the liquid ingredients: eggs, peanut butter, and almond milk. Incorporate dry ingredients: monk fruit, cocoa and baking powder and stir until a well-integrated dough is formed.
  4. Scoop out cookie dough into 10 large cookie balls. The dough should be thick and sticky.
  5. Place each ball on the baking sheet and flatten with your fingers to form a thick, flat, round cookie.
  6. Bake for 12-15 minutes, be careful not to bake too much so they don't dry out of the center.
  7. Garnish with peanut butter (optional).
