Ingredients
- 1/2 cup oatmeal
- 1 cup almond flour
- 2 eggs
- 1/2 monk fruit
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp mix of spices (cinnamon, cloves, cadamomo)
- 1/3 cup mashed sweet potato
- 1 tsp vanilla
- 1/4 Greek yogurt s/a
- In a bowl mix dry ingredients.
- In another bowl mix wet ingredients and mix both mixtures until integrated
- Transfer to a loaf pan lined with parchment paper, sprinkle with walnuts (optional) and bake at 350ºF for 45-50 minutes.
- Decorate with a Greek yogurt frosting with stevia.
