  • 1 3/4 cup almond flour
  • 1/4 cup monkfruit and erythrole mix
  • 1 teaspoon baking powder
  • 1/4 teaspoon sea salt
  • 1 egg

Stuffed

  • 1 cup blueberries
  • 1 cup strawberries

  • 2 teaspoons monkfruit-erythritol mix
  • 1/4 teaspoon xanthan gum
  • 1 teaspoon vanilla *optional
  • 1 teaspoon cinnamon *optional
  • Zest 1 lemon *optional

Process

  1. Mix the ghee (it must be at room temperature), with the monkfruit. Add the egg and mix completely.
  2. In a bowl stir the remaining solids: almond flour, baking powder, sea salt.
  3. Gradually add the solids to the liquid mixture.
  4. Integrate everything, divide the mixture in half. Make two balls and stretch the dough with the help of a rolling pin and waxed paper.
  5. Once the two bases are stretched, put them in the freezer for about 10 minutes.
  6. While you wait, mix all the ingredients in a bowl
  7. You can add cinnamon, lemon zest or vanilla without taste to give it more flavor.
  8. Take the dough out of the freezer and with the help of a round cutter or knife, give it the right size to be able to cut the base and the lid.
  9. Place the base of the dough on your saucepan, covering the walls, now fill with the prepared red fruit mixture and cover with the other part of the dough.
  10. Bake at 180ºC for about 20-25 minutes
  11. Ready! to enjoy without guilt
