Crispy Chocolate Waffles

Recipe by Fer Borja, Healthcoach

Keto, Paleo, gluten-free, sugar-free and with the option of being vegan.

·1 large egg (as a substitute it can also be flaxseed egg: 1 tablespoon of flaxseed powder + 3 tablespoons of water and let it soak for 5-10 minutes)
· 1/2 cup of almond flour
· 2 tablespoons Monk Fruit
· 1/2 teaspoon baking powder
· 1/4 teaspoon of salt
· 1 tablespoon of CULTO Cacao Powder
· 2 tablespoons of unsweetened almond cream
· 2 tablespoons of ghee (you can substitute with coconut oil to make your waffles vegan)
· 1/4 cup of almond milk
· 1 teaspoon vanilla

  1. Grease the waffle iron with butter, ghee or coconut oil. Plug and turn on (on a medium level)
  2. Melt the butter or coconut oil + almond cream in a bowl
  3. Mix all the dry ingredients in a bowl
  4. Add the melted almond oil + cream
  5. Add the almond milk and vanilla
  6. Add the beaten egg or flaxseed egg at the end
  7. Mix everything well
  8. Add about half of the mixture or a little less to the waffle iron and cook over medium heat for approx. 3 minutes, here it depends on your waffle maker.

For topping add whatever you like, I added a little blackberries, walnuts, cinnamon and maple syrup (be careful if you are on keto).
