Ingredients
- 3 1/2 cups of almond flour
- 1/2 tsp. baking powder
- 1/4 tbsp. Salt
- 1/3 cup butter
- 1/2 cup monkfruit
- 4 eggs
- 3/4 cup sour cream
- 1/2 tbsp. vanilla extract
- 3 tbsp melted butter
- 2 tbsp pulverized monkfruit
- 1 tbsp. plain almond cream
- Toasted almonds
- 1/2 cup toasted sliced almonds
- Preheat oven to 350ºF. Prepare the mold with a little oil and waxed paper at the base of the refractory.
- Cream the butter and monkfruit together.
- Add the almond flour, baking powder and salt. Beat eggs, sour cream, vanilla and almond extract.
- Bake at 350ºF for 30-35 minutes or until lightly golden and a toothpick comes out clean when removed from the middle of the cake. Let the cake cool for at least 30 minutes.
- At this time make the glaze: You just need to combine all the ingredients until there is a uniform mixture.
